I’m very blessed to have a number of particularly rocking mummas in my life that I call my friends.
This morning I had coffee with one, then met 3 at the zoo. Sure, our conversations might be disjointed and we rarely get to actually finish discussing a topic, but I always leave feeling more sane, refreshed and usually with a new tip, idea or recipe!
This week, the gorgeous Mrs. S-W shared a DIVINE recipe with me. When I saw her today she raved and rated it so highly that I just HAD to go home and make it for my kiddos afternoon tea. Boy did they LOVE IT!
It’s gluten free AND sugar free (but looks kinda like a treat!) Yet it’s healthy! Winner winner chicken dinner! You can also make it dairy free too 🙂
Here’s what you do…
FOR THE BASE:
1 cup nuts (almonds, cashews, walnuts, whatever you like!) I used half cashews and half walnuts because that’s what I had left!
1/3 cup coconut butter (you could use coconut oil if you don’t have the butter)
1/4 cup dried coconut
Method: Place all the ingredients into the thermomix or food processor. Put on Speed 8 for 20 seconds, or until mixture is a finely chopped. Tip into a tin or tray lined with baking paper (you’ll see I used cling wrap as I was out of baking paper!) and press down firmly. Place in freezer while you prepare the filling.
FOR THE FILLING:
2 1/2 tbsp of peanut butter (try to use the only nuts spread, with no added nasties)
3 tbsp milk (or coconut milk if you’re doing dairy free)
1 tbsp vanilla bean paste
4 tbsp cacao powder
1/4 cup coconut butter (melted)
A splash of hot water
Place all the ingredients into the food processor or Thermomix. Mix for 1 minute at 60 degrees, speed 3. Add a good splash of hot water and mix on speed 6 for a further 20 seconds (at 60 degrees). If you’re using a food processor, just whizz until smooth!
Take the base out of the freezer. Using a spoon, place globs of the filling on top and then use the back of a spoon or small spatula to evenly spread it out. Top with dessicated coconut and anything else you like! (Pistachios as seen here for example!)
Refrigerate for 2 hours or place in freezer for 45 minutes.
Cut and serve! You can freeze this! It’s delicious! 🙂
